Most light roasts taste thin because they were rushed. This one isn't. The cherries grow at 1,800-2,200 meters in Sidama and dry whole on raised beds for weeks before anyone touches them. That slow drying is where the berry and the stone fruit come from, and it's why the cup finishes more like a glass of chilled red wine than a mug of coffee.

Drink it black. Milk buries the florals you paid for, and the acidity is bright rather than sharp, so you won't miss it. A pour-over gets the most out of it. It also makes a very good cold brew, if you want the fruit without the heat.

Good if you like: fruit-forward coffee, natural-process Ethiopians, tea, or anything you'd describe as "juicy."

Brew it: Pour-over or Chemex, 1:16, water just off the boil. Excellent as cold brew.
