Most dark roasts taste burnt because roasting deep is the easiest way to hide a mediocre bean. We take specialty-grade Brazil and Mexico and stop the roast at medium-dark, right where the cocoa and toasted nut show up and just before anything starts to taste like carbon.
The result is full-bodied and sweet on its own, and it doesn't disappear the second you add milk. If you've been buying dark roast at the grocery store and telling yourself that's what coffee tastes like, this is the correction.
